You know the business best, and while you may want to satisfy your customers, you will never be able to satisfy everyone all of the time. It is my feeling that it is better to do less, and do it very well, than to take on alot more and do it poorly or fail financially. I would love for you to be open for breakfast. Parfaits with yogurt and fruit, scones, muffins. Would I be there often? Probably not. So to make me happy you open up early, but then only have a few people all morning. Not a good business move.
My only suggestion to take into consideration everyone's requests, would be to open early for a breakfast or stay open late for a particular themed evening, only once a month or once in awhile. Then it is special and people may come because it is an "event" to attend.
And if you can't do it, don't feel guilty!
Can't wait to see the finished tearoom; it sounds lovely!
